The Best Gluten Free Victoria Sponge

It taste better than it looks in the photo!



I have been gluten free for over a year now. It has helped me reduce my sickness, bloating and increased my energy levels. Although I eat gluten free it doesn't mean I can't have my cake and eat it! After many various attempts I have found one of the best Victoria Sponges ever!

Ingredients

175g Gluten Free Self Raising Flour 
175g Soften Butter
175g Caster Sugar 
3 Large Eggs
75ml Milk 
Vanilla Extract 
150ml Whipping Cream 
3-4 Tablespoons of Jam 
Icing Sugar


Method

  • Pre heat the oven to 190 Degrees/Gas Mark 5/ 
  • In a bowl beat the flour, butter, sugar,eggs, milk and a few drops of vanilla extract 
  • Use some extra butter to grease 2 x 8 inch sandwich tins and spilt the mixture between the two
  • Bake in the oven for 20-25 minutes until cooked all the way through and golden brown 
  • Leave to cool and in the meantime whip the cream 
  • Once the cakes have cooled spread the jam & cream into the centre and place the two cakes together to make a sandwich. I used raspberry jam
  • Dust icing sugar on top 
  • Enjoy!
