Cheesy Chicken Pasta : Slimming World Style

As some of you may be aware I joined Slimming World about 3 weeks ago with my main target being able to run around with little man next Summer when he is up and walking. I thought sharing my recipes that I love will help me stick to the task in hand. This week it is everything I love in life. Chicken and cheese and best of all it is all free and super quick to make. In hindsight I think I should of measured the pasta. I cooked waaaay too much!


1 Chicken Breast (Free)
Pasta (Free
1 Cup of Spinach (Free)
1 Cup of Mushrooms (Free)
1 Red Onion (Free)
2 x 35g tubs of Philadelphia Light (Healthy Extra A)
2 x Teaspoons of Garlic  (Free)
1 x Chilli (Free)


  • Boil how ever much pasta you like, I used far too much 
  • Cut the chicken into cubes and dice the onion & mushrooms
  • Heat up a frying pan and add the chicken, onions & mushrooms
  • Add the Garlic to taste
  • Once the mushrooms have softened, onions browned and chicken almost cooked through add the two tubs of Philadelphia Light
  • Mix all together and add a few drops of water to thin the cheese and make more of a sauce
  • Add the spinach and leave to wilt 
  •  Drain the pasta and mix into the cheesy chicken goodness
  • Pop it into a bowl with some chilli's on top
  • Enjoy!
